My thoughts on "The Big Bang Theory"

It's FANTASTIC!!

I recently reactivated my NetFlix account and the first thing on my list was (of course) the first season of "The Big Bang Theory" from CBS. Oh man was it amazing!!

Leonard, Sheldon, Howard, Raj and Penny have come into my life in the form of three DVDs and have filled it full of joy and laughter! I now have to wait for season two to be release on September 15th and then hope I'm one of the first few people who put it in my queue so I will receive it by the 16th. That would be fabulous! Oh yes yes it would!

What is "The Big Bang Theory" you may ask... well I suggest you go to CBS.com and watch some of the episodes of "The Big Bang Theory" or go to your NetFlix's queue and add the first season of "The Big Bang Theory"... it's only three disks and it's GREAT! Trust me!

This now ends my raving review on "The Big Bang Theory". Now go watch it!

I love my job and white parties!

Man I haven't blogged in almost a month! Where does the time go!? It's almost September... That blows my mind!

This time last year I was starting my final semester of college at Point Loma Nazarene University. A year later, I have been with Experts Exchange for just over six months, paying students loans (1 done, 3 to go), wanting to go camping any and every free weekend I get and the proud mommy of the CUTEST puppy in the world, Lucy Juliet Seybert. Oh man how time changes things!

Without homework and with incredible co-workers, I get to do a lot of cool things I didn't get a chance to do before.

For example, Friday the marketing department had an all day off-site which was incredible. Even though we were working, it wasn't at the office and so it didn't feel like an all day meeting. A change of venue was so refreshing! It wasn't in a boring conference room at a hotel either... oh no. It was at Edna Valley Vineyard. It was BEAUTIFUL out there and SUCH a nice day! Floor to ceiling windows of views to the rows and rows of grape plants... BEAUTIFUL!

Then we were H2 limoed (yes... no joke) to Laetitia Winery for some tastings for the last hour of the day. What a great way to spend a Friday!! Did I mention the weather was perfect (close to 100) for the Laetitia bubbly? Oh yes, YES it was!!

Well to top of the night, a few of my co-workers and our boyfriends gathered at The Native Lounge for a White Party. It was SO much fun! We were all dressed in white (hence the name of the event) and there were three dollar White Russians... oh man! Granted, I doubt I will ever need to go back to Native, it was still fun. Shopping for a white dress this late in summer wasn't as hard as I thought it would be. So fun!!

I look forward to the near future of camping and a possible San Francisco trip... we'll see!

Stuffed Red Peppers

This weekend Ryan and I went to Cambria to celebrate our one year anniversary. To try and stay on the straight and narrow with Weight Watchers, I made some Stuffed Red Peppers. They were DELISH!!!! If I do say so myself :o) Here's how I made 'em.

Noelle's Stuffed Peppers 

Ingredients:
Extra Lean Ground Beef (4% fat) 
Trader Joe's Organic Brown Rice
A couple bell peppers (whole)
Pico De Gallo Salsa

Directions:
Heat oven to 350 degrees

Slice the top off the pepper and carefully clean out the middle, removing all the seeds. 

Brown the hamburger until it's ALMOST done

Cook the rice as per the directions on the box

Once the hamburger is ready, add the rice and the salsa and mix thoroughly

Then spoon the mixture into the peppers and pack firmly, without breaking the pepper 

Put the peppers and their side in a over safe pan with tall sides

Fill a cookie sheet with some water and place the pepper pans in the water 

Cover both sets of pans with aluminum foil but keep the sides open to vent the steam

Cook for 30 minutes and then remove, serve and enjoy!!
