Good bye November, Hello December!

On the eve of December I felt like sharing some yummy treats I've found over the past few weeks.

As many of my friends know, I LOVE soup because it's so tasty and such a great meal on a cold day. Sipping soup in front of a fireplace or a movie (better if you get both!) is such an awesome feeling! I want to share two new finds with you guys.

Market Classics Soup Mixes from Cost Plus World Market

These are VERY easy and tasty and better yet, they make 8 servings for only four bucks! I made the Spicy Tortilla one last night and threw in a big can of white meat chicken and cooked it for about 30 minutes and had an amazing soup for dinner and a couple lunches to come as well!

Quick and easy (not to mention VERY tasty) meals for your fall festivies!

Warning: This is NOT for those who don't like spicy foods. I LOVE spicy food and so this soup was AMAZING! I made this for a Thanksgiving day lunch (we had the big meal for dinner) and it was too spicy for most, but those of us who like spicy thought it was tasty. This recipe is a little more involved and requires some random ingredients, but no worries. If you can't find sofrito (which I couldn't) I just used ranchera sauce or you could use chipotle sauce. I'm thinking if you can't find the chipotles in adobo sauce that you could just use some ground chipotle peppers. Just do it to taste.

Another warning: It gets spicier as the days pass. I made it the night before and it wasn't too spicy and then by the time I served it for lunch, it was kicked up a notch. Delish in my opinion!

I'm learning my love of cooking and so I'm thinking this blog will be updated on my new finds every so often.

I'm also open to new recipes that you see and want me to try. I'd love to try a little bit of everything. Send them my way!

It's been over a month!

So it's been OVER A MONTH since I've last posted and that isn't acceptable.

What has happened in a month since I've last posted? Well... let's see....

I moved into my house in San Diego
I started work at Point Loma
I trained for a week in San Diego
I went on the road for three straight weeks recruiting for Point Loma
I came back to a Point Loma Preview Day
I finished my training (in office stuff)
I've read a ton of applications for Fall 2010
I went to PLNU's Homecoming 2009
I've gotten approval for a new apartment starting January 1st, 2010

WOW!

Let's highlight some of the more major points.

I work in the Undergraduate Admissions office and it's incredible! I truly love my job and love going into work everyday. I have met some of the most awesome people ever on the road traveling and then in my co-workers. 
They're definitely so amazing and make the job just that much better. We're in the middle of reviewing hundreds of applications for the Fall of 2010. 

Our first deadline just passed and so we're reviewing all of the applications and getting decisions out by December 20th. Busy time, but it's AWESOME! 

A "typical day" at my job includes a couple interviews with high school students, reading applications, answering emails and phone calls. Interviews are probably my favourite part of my job because I get to meet so many cool high school students who really want to be at Point Loma and have some great things to say. 

My housing situation:
So in my last post it looked like I was super stoked on my housing situation and granted, yes I was... that was until I got to the house. My housemate is awesome (Laura), but we share the kitchen and bathroom with a couple that lives in the detached garage turned studio and they are very disrespectful and just dirty. After dealing with thirty somethings acting like their in their teens/early twenties, my roommate and I had had enough and started looking for a new place to live and just learned today that we're approved to live in Mariner's Cove apartments and we're VERY excited! 
Move in date: December 28th. AWESOME!

What's next for Noelle?
More application reading, packing up my old place, heading home for Thanksgiving, more applications, more packing, home for Christmas, moving into new place and possibly Las Vegas for New Years 2009.
