Sunday Supper - Chicken Mushroom Noodles

I'm a HUGE fan of easy to make yet incredibly tasty crock pot meals. If I can throw a few ingredients in the crock pot, walk away for 8 hours and come back to a practically done meal, I'm stoked. That is exactly what this recipe is and you'll be the envy of all those within smell distance of your dwelling.


"Chicken Mushroom Noodles"
Thanks to my friend Josh
Level: Easy
Prep time: 5 minutes
Cook time:  8 hours
What you'll need:
2 cans of cream of mushroom soup
3-4 frozen chicken breasts
1 packet onion soup mix (the dry stuff)
1/2 cup of sour cream
Noodles
What to do next:
Put the chicken, mushroom soup and onion mix into the crock pot.
Turn the crock pot on low and walk away for 8 hours
After eight hours, shred the chicken with two forks and add 1/2 cup sour cream and stir.
Start boiling your noodles while you're still cooking the chicken mixture.
When the noodles are done, cover with the chicken mix and viola!

ENJOY!

It's seriously that easy and I didn't have a single window or sliding door open and I could smell my crock pot from where I park my car and all the way up my stairs. Nothing like opening your door and being smacked in the face with amazing smelling food!

It keeps well for leftovers which is awesome for lunches the following days and for dinners taken to class. Delish!

Second dates are less awkward...

For those who have been following my adventures in online dating, here's the next installment of the first guy I met through eHarm.

As a refresher if you missed the last post about this guy (found here) we didn't eat the whole first date so I was skeptical about going on the second one and if I should eat at least a snack or bring provisions with me for my sly bathroom runs.

The last date at The Regal Beagle we completely ignored the amazing menu but we found common ground of loving sushi. So obvi the second date was going to end up at a sushi place. You can't ignore eating when you go to a real restaurant can you? Well...

Just kidding! We totally ate. ha! We went to Harney Sushi in Old Town and it was amazing! So good! Delish.

Well I pretty much hate Old Town San Diego because of the parking and I purposely parked a little bit further from the restaurant so I would have an excuse to avoid the awkward more small talk that happens after the date ended and you're now at the car. Well that again backfired. I'm coming to realize I just need to own everything and not expect to "get out" of anything...

Because parking sucks, I was a wee bit late, but he already had a table and was sitting there without water and with the two seats right next to each other. Um no thanks and so I play dumb and just sit across from the seats and he then tells me to move closer. "oh my bad! Sorry!" and so I move to the head spot on the table hoping he wouldn't tell me to move yet again. He didn't! But now I'm at the head of this table and he's very close to my and keeps touching my knee. Ahh!! 

We take forever to order and the waitress finally starts to suggest stuff and he's like "oh I guess we should order". Phew! I started getting nervous that we wouldn't eat AGAIN! Not the case. We ordered two rolls and edemame (however it's spelled).

Continue the small talk and I have to admit this time it wasn't as horribly awkward, but I had just seen him and so not much had happened between dates and so it's not like we had a whole week to catch up on. Oh well, I dealt with it.

I'll be the first to admit I have horrible ADD and when a meal is over, I'm ready to go. No matter who I'm with. Ask anyone! Last bite is done and I already have one foot out the door. Well not the case with Mr. Carmax (that's how I'll refer to him (he works there) as to save his identity). We sat and chatted more despite my two trips to the restroom... I really did need to pee, but come on buddy 2.5 hours for sushi? Oh well...

So we finally leave when the place starts getting really packed since it turns into a bar/club atmosphere at night. Kinda cool!

When we're outside...
Me: "Well I'm over here but it's been so great! Thanks again for a fun night!" *hug*
Him: "oh I'll walk you"
Me: "um... you sure?"
Him: "of course!" 
Me: "why how wonderful" 

At this point I needed to pee again (I've been drinking a ton of water lately) and so I was counting on dashing around the corner at full sprint in order to get to my car and bolt home. No such luck.

We keep chatting about movies we like and what we're up to the rest of the weekend and this coming week.

**Then cue the awkward car scenario** We stand and chat outside despite the fact I'm shivering (I'm blaming the cold and not the fact my bladder is about to explode). So I say thanks, yet again and give a hug and he starts ANOTHER conversation. At this point I'm about ready to own the fact I'm hurting I have to pee so bad, but I keep my cool and just increase the shivering. He finally gets the picture and lets me go.

At least I gave him another hug...
Not without the awkward lean in trying to get a kiss and I'm like (mentally) WHOA BUDDY!?!?!?!?!! and do the awkward "oh yayy gooood niiiight" *nervous laugh* and one armed hug. Phew tragic disaster avoided! My heart just raced again thinking about that horribly awkward moment. *shiver*


The improvement from last time is that I only got a single text from him the next day! I was floored! Happy, but shocked!

Mr. Carmax probably won't get a third date because I don't believe in leading someone on. However, he was super nice, but in a different place in life than I am.

In other eHarm news... these guys act quick! Two emails back and forth and they want to go out tomorrow! So crazy! An attorney, dentist and news producer have caught my eye and I'm hoping to meet them soon. Ha! We'll see!

With that I need to continue cleaning my house on this dreary day in San Diego while I continue to avoid homework.

First dates are so awkward...

Let's be honest... who really ENJOYS first dates? This girl doesn't that's for sure. So I went on my first eHarmony date on Wednesday night and it wasn't a train wreck but it wasn't pretty.

Keep in mind the whole reason we got together on a Wednesday was for wings... this will make sense later.

So we arrange to meet at 6:30 at one of my favorite places (The Regal Beagle) since it's a place I know, the owners know me and it was halfway between the two parts of SD we live in. Well at 5pm he text me that the traffic was horrible so could we meet at 7 instead. Hm ok... I hate that, but not a deal breaker. So we're now meeting at seven.

I get there and sit in my car waiting for him to text since honestly how do you find someone you don't know besides their photos online? One friend suggested "just shout his name"... yeah that would have been AWESOME! 

He texts me right at 7 that he just pulled in and was outside. Well I noticed the car he got out of and let me tell you I had to wipe the drool. A beautiful black BMW. Then the smart girl in my head chimed in "just because he has that doesn't mean anything... he could be leveraged into oblivion" TOUCHE self... thanks for keeping me grounded. What would I do without that little voice?

So I walk up to the front and there he is... His profile said 5'7. HA! MAYBE 5'6... maybe... I'm 5'5 when I have good posture and so the first thing I flash back to... man he must of have taken photos with the shortest friends he has! Not a deal breaker, but yes something I inside giggled about right off the bat.

When we walk into The Beagle I say hey to the owners, notice it's not as packed as I thought and told him the ropes of the place since it can be a little overwhelming at first. We order a round of beers after he says that he's not that hungry so we'll grab food later. (Time check: 7:10)

We find a table in the corner (I felt like I was in timeout) and sit and start the awkward chit chat about what had been emailed back and forth on the eHarm. We found common ground and talked about work and in the mean time my beer is almost gone and we're still plugging away on chatting. (Time check: 7:55) SDSU game starts on all the screens in the place.

Conversation easily turns to sports and both beers are gone and one of the owners comes over and says "you guys are getting crazy, you're cut off" and this guy looks at him like he's an idiot and says "hey thanks man, we're good" (my thought: WE ARE?! Wait no, come back!!) meanwhile with all the talking my throat and mouth are dry and I really wanted to try one of the other beers on tap (It was made in espresso soaked barrels!!) but didn't want to seem like an alchy so there I sat. (Time check: 8:30) 

With the first REALLY awkward lull in conversation I run to the bathroom if only to check my phone and grab a sly glass of water.

The SDSU game is wrapping up and we're still sitting there... no food, no beer, and nothing to talk about. I try my "well this has been so much fun, but unfortunately I need to go do homework before class tomorrow" in hopes that would get me out of there, nope... backfired... whole new convo started about why and what I'm getting my masters in. (Time check: 9:15)

At this point my tummy is growling and I'm incredibly thirsty... so I go "alright it looks like their trying to close up, want to head out?" It worked!! We were on out way. Or so I thought...

Then you get to the parking lot and it's like do you let him walk to your car and risk an awkward hug up against your car and the whole awkwardness of that, or do you just own it and have the awkward goodbye in the parking lot for all to see and for those who were betting in the restaurant if you were on a first date be able to collect? I opted for the parking lot goodbye while he tried to nail down a second date. All I can think about is how much I want a California Burrito from Taco Fiesta... so I'm like "sure! Sounds great, text me!" 

Well I got - no joke - close to thirty texts yesterday... overkill! And now we're going out again tonight for Sushi...

You may wonder... why go out again? Train wrecks aren't fun! True, you're right, However, in this whole ordeal I have a goal. I'm going to try and stop writing people off so fast. After two dates if nothing is there, then nothing is there. And that's it. So here's to date two!!

And with that, my lunch is over and I must head back to work.

My adventures in online dating

You read the title right. I entered the world of online dating on Monday. I still laugh at it myself when I think about it. Don't worry, you can laugh too!

I opted for eHarmony over the others because of research I did (yes, I did research on it) oh and they were having a 50% sale on a three month membership. So, why not? Exac!

I'm going to own it! I am an online dater. Yup! I sure am! I'm going to own it and document my time as an online dater here. I don't want to be one of those people who randomly goes on dates with no real story on how you two met. You know how awkward that would get? "How'd you two meet?" "oh um yeah at Vons at the deli counter..." No thanks.

How many of you have wondered "hmmmmmm" when you see Match.com or eHarmony commercials? Well here's the demystifying account of what happens! I welcome comments, criticism or hey encouragement!

Here's my reasoning why I went for online dating (besides the sale):
  • I honestly don't think I have the time or energy to find someone to date. I hate going to crowded bars and trying to pick up on people. You end up getting skeezy guys trying to pick up on you with horrible pick up lines. While I've heard of success stories of bar relationships, that's just not for me.
  • I don't care enough to put myself out there. I'm too shy to just walk up to someone cute and be like "hey let's grab drinks!" Not going to happen, unless I've had a drink already! 
  • My commitments aren't places I'd want to meet people. I work with high school seniors all day and that would get me arrested even if I did think one of them were cute and I'm in an MBA program at PLNU and I've always said "don't date a Loma boy because you'll end up in a group project with them." Also, how awkward would it be during break to be like 'hey great answer to that last question, wanna grab a drink?' um no, not going to happen for this girl. I have met some awesome people and am not saying I "can't" meet people here, it's just hard! And I'm there to focus... yes, focus.
So I've been on the eHarm for a few days and already went out once (I was floored how fast these guys act!) and so I'll update those who are interested tomorrow most likely on my first date which happened last night and any other unfoldings that happen.

The life of a single girl is going to get interesting!! I mean who doesn't want to be Julia?!

Sunday Supper - Overnight Breakfast Delight!

Every week my work has staff meeting on Tuesday mornings at 8:30am. Every week we rotate who brings "snack" (read that as breakfast) to help jump start the meeting. This week was my turn and so I searched AllRecipes.com for a simple, yet delish breakfast item. I did my own thing yet again with this recipe and so if you want the original, the link is located below.


"Slow Cooker Western Omelet"
Prep time: 30 minutes
Cook time: 11 hours
What you'll need:
1 1/2 pound frozen O'Brien potatoes 

1 onion, diced
1 red bell pepper, seeded and diced
1 orange bell pepper, seeded and diced
1 1/2 cups shredded cheddar cheese
12 eggs
1 cup milk
salt and pepper to taste

What's next:
1) Dry off all the peppers and onions in a paper towel. You need to rid all the water off the veggies before putting them in the crock pot.
2) Lightly grease a 4 quart or larger slow cooker. Place 1/3 of the hash brown potatoes in a layer on the bottom. Layer 1/3 of the onion, peppers, and Cheddar cheese. Repeat layers two more times. In a large bowl, whisk together eggs and milk, and season with salt and pepper. Pour over the contents of the slow cooker.
2) Cover, and cook on Low for 11 hours.
Thoughts from the chef:
The original recipe said to cook it for 10-12 hours, I wouldn't cook it any longer than 11 hours. I added just a little bit of salt and pepper in the eggs mixture before I poured it over the potatoes and veggies, but it needed a ton more! Next time I will probably add some sort of spicy component like cayenne pepper or something along those lines. 
So easy and so tasty!

It's things like this that make "keeping on" easier

I got this recommendation randomly one day this summer when I was traveling for my current job and really hating it. I was floored and caught off guard, but it was incredible to hear/read. I just stumbled across it again today and it's comforting to know someone thinks this highly of me. We all need that sometimes, you know?

Sunday Supper - Homemade Pizza

The third installment of Sunday Supper. This week I made Homemade Pizza with lots of fresh veggies on top. Delish! I got this recipe from my amazing best friend Jenn Cowles and the beauty of the recipe is because you can top it with whatever you'd like and change the dough too. Again, DELISH!

All the ingredients are from Trader Joes. If you don't have a TJ's by you, definitely try to find the same type of ingredients at a store near one. This is one of the best pizzas ever - because it's all fresh!

"Homemade Pizza"
Level: Easy
Prep time: 30 minutes
Cook time: 10-15 minutes 
What you'll need:
1 package of garlic and herb pizza dough
1 jar of bruschetta sauce 
1 package of spinish
Sliced bell peppers
Sliced olives
Marinated artichoke hearts
Shredded cheese
All your yummy ingredients















Now to make it: 
The key is to set the dough out on a floured counter for at least 20 minutes. That way it's not cold when you're trying to form it into a circle of dough
Make sure you let it sit








 



Then top of the dough with the bruschetta and spread around
Then top with all your various toppings (if you use spinach, put that on last)
Right before it went in the oven










Cook per the instructions on the bag of dough (I usually cook it a little longer for crispier dough)
Voila! 
All done! Cool, cut and enjoy!

Sunday Supper - Sweet and Spicy Chicken Stir Fry

Here's the second installment of Sunday Supper with Sweet and Spicy Chicken and Veggie Stir Fry. At the end you'll see tips and tricks I learned from the recipe. I didn't follow it exactly this time, but I'll list it as I got it with updates/substitutes/suggestions in bold red text.

"Sweet and Spicy Stir Fry with Chicken and Broccoli"

Level: Easy
Prep time: Under 30 minutes
Cook Time: 30 minutes (approx) 
What you'll need:
3 cups broccoli florets 
1 tablespoon olive oil (I didn't measure it, just poured some in the wok)
2 skinless, boneless chicken breast halves
1/4 sliced green onions (I left this out)
4 cloves garlic
1 tablespoon hoisin sauce (I did 3 tablespoons)
1 tablespoon chile paste (I left this out)
1 tablespoon soy sauce (I did 3 tablespoons)
1/2 ground ginger
1/4 teaspoon crushed red pepper
1/2 teaspoon salt (I left this out)
1/2 teaspoon black pepper (I left this out)
1/8 cup chicken stock (I did 1 cup)
1 bell pepper
4 stalks of celery
2 large carrots
1 medium sweet onion 
2 handfuls of peanuts 
Rice

All my veggies















(this is what the website says to do)
1) Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 5 minutes.
2) Heat the oil in a skillet over medium heat, and saute the chicken, green onions, and garlic until the chicken is no longer pink and juices run clear.
3) Stir the hoisin sauce, chile paste, and soy sauce into the skillet. Season with ginger, red pepper, salt, and black pepper. Stir in the chicken stock and simmer about 2 minutes. Mix in the steamed broccoli until coated with the sauce mixture.

(this is what I did)
1) Cut up all the veggies into pieces and set to the side. Cook your rice according to how you want it 
2) Heat oil in a hot wok and add cut up chicken and some of the onions and garlic. Cook until chicken is almost done.
3) Add soy sauce and hoisin to the chicken and stir.
4) Add all the veggies and peanuts then mix thoroughly in the sauce.
5) Cook until the veggies aren't soggy but cooked.(approx ten minutes)
6) Add the chicken stock and stir all through and then cook for a few minutes.
Serve over rice
Now wok it out!
